The day is spent in close contact with the “butteri” – Italy’s very own cow-boys, who once proved their worth by winning an epic contest against Buffalo Bill’s own cow-punchers, and are still at work today raising the Maremma district’s characteristic herds of curved-horned castle. You can watch them on the job displaying their skills: lassoing wild cows and horses, branding cattle etc. etc. All transfers will be by jeep. Picnic lunch. Open-air barbecue dinner in the butteri’s company, featuring their traditional cuisine, with unlimited wine and folk-music accompaniment.
